Easy stuffed roasted peppers for a light dinner. I stuffed the peppers with a mixture of quinoa, chickpeas, peppers, garlic and onions and a coconut chili sauce and roasted it in the oven. With a candied salmon, blueberry and goat cheese salad on the side, it was a delicious meal.
Sorry for my lack of posts in the last week and a half! Not only have I been really sick but I've been moving as well, and the internet still hasn't been set up at my new place. There are still a few more things to finish, but I am already loving my new home in Mount Pleasant! Here I am wearing one of my favourite vintage sweaters that I actually bought at a sale in this area a couple years ago.
